Gold Chanterelles with Sun Dried Tomato Pesto: A Veggie's Delight!
With an ice cold bottle of dry white wine and a tossed green salad. This dish will really get things throbbing! An orgy of flavors, the idea is to serve a variety of tastes that enhance one another.
Chanterelles are a substantive mushroom. Bite into its meaty texture and get a 'surprise' like no other. This flavor holds it's own in strongly seasoned dishes. Combine with wine, olives, peppers, garlic and tomatoes, its surly……
Ingredients:
- 1 large Spanish onion
- 2 teaspoons olive oil
- 1 pound fresh Chanterelles, cleaned, trimmed and chopped.
- 2 ounces of dry white wine,
- 1 red bell pepper, cleaned and chopped
- 3 ounces pitted black olives, rinsed and chopped
- 3 cloves fresh garlic, or four, chopped fine
- 1 ounce Marsala
- 1 teaspoon tamari
- 1/3 cup sundried tomatoes
- French bread, cut in 1/2 inch rounds
- Freshly grated Parmesan cheese.
How to cook it all:
Chop onions into small pieces, preheat skillet over medium heat. Add olive oil.
Add chopped onions and sauté. Add 1-tablespoon wine to mushrooms (take a swig of wine for yourself: when the liquid is good, you don't mind swallowing).
When they get sticky (the ingredients, that is) add garlic to the onions when they become translucent, then mix in the chopped chanterelles with another tablespoon of wine.
With continuous motion, stir. They'll begin to release their own natural moisture: hhhhmmmmmm: yum!
Simmer and stir for about 10 minutes, then add peppers and olives, then Marsala. Cover and simmer for about 5 minutes until tender.
Add Tamari and Sundried tomato pesto, mix well, and serve over French Bread rounds. Garnish with Parmesan Cheese!
